Varieties for winter storage
Not all varieties of zucchini are suitable for fresh winter storage. Such varieties well preserve the appearance and taste:
- varieties Gribovsky, Festival, Golden Cup - they have a dense peel and a small number of seeds, lie up to 5 months;
- An aeronaut with dark green taut fruits is stored for about 4-4.5 months;
- Arlik, Yellowfruit, Asset retain their properties for 3-4 months .;
- blackish-green fruits of the Negrotenok variety are able to lie no more than 2 months.
Zucchini varieties of Zolotinka, Gypsy, Zebra, Bumblebee, Squorush can also be harvested for the winter.
The skin of zucchini suitable for long-term storage should be thick and dense to protect the fruit from rotting. There should be no damage to the surface of the peel. Scratched zucchini is best eaten immediately after harvest.
It is necessary to collect vegetables from the garden along with the peduncle, cut by 6-9 cm. It protects from putrefactive processes and drying out the pulp. The condition of the legs determines the quality of the fetus. If it is tight, the zucchini can still be stored. Fruits with soft legs will not last long, they must be eaten immediately.
Fruits selected for stock are not allowed to be washed. They are wiped with a dry cloth from the ground, dried from moisture. Fruits are stacked in an ordinary wooden box vertically, legs up, in one or more layers. Between the rows stack clean sheets of cardboard.
With proper preparation and selection of the courgette premises, the entire time allotted for the variety will be stored without loss of appearance and taste characteristics. - put in a special container.
To store vegetables in this way is advised in special food plastic containers (polypropylene). A snowflake should be drawn at the bottom of the container or minus temperature indicated. Such plastic will not emit harmful substances when exposed to the external environment and will not affect the quality of the products.
In the freezer, the nutritional value of the fruit is not lost, but their external properties change. After defrosting, the vegetables will become soft, suitable only for frying or stewing.
In the cellar
Zucchini, zucchini and squash can be stored in the basement of the house or cellar, if there is good ventilation. If they are placed on shelves, the fruits are laid on straw at a distance from each other. They can also be wrapped in dry, natural fabric.
You can also keep vegetables in the cellar in boxes from wooden boards or cardboard boxes. A cloth or cardboard is placed between the rows to protect it from lower temperatures or the penetration of sunlight.

Subject to the collection rules and the selection of suitable conditions, vegetables will lie for 4-5 months from the date of harvest. Zucchini is stored the longest - from summer to mid spring.
Check the quality of the fruit every 10-14 days as the stalk. Also, vegetables need to be turned and swapped to avoid squeezing and to provide longer storage.
Using Spoiled Zucchini
When checking the quality of the fruits in the total mass, it is necessary to extract spoiled so as not to lose the entire crop. If the stalk became black and dried, decay began. Further actions depend on the scale - completely decayed specimens are thrown away. If the stalks turn yellow, become soft, vegetables will soon begin to deteriorate.
If this happens in one place, the site is cut off, and zucchini is prepared in any way. Soft vegetables are suitable for stews or caviar. Fruits that have kept their density can be fried and added to the soup.
The box in which rotten vegetables were found is freed, washed, dried. Fruits are aired, they change cardboard in partitions, sprinkled with grated chalk.
